Fresh Coleslaw Recipe

Tangy, crispy, colourful… cabbage is an unsung nutritional superstar. From the Brassica family (which includes broccoli, cauliflower, and kale), this vegetable shines in such popular cultural dishes as sauerkraut, kimchi, borscht, haluski, and cabbage rolls.

Despite its humble reputation, cabbages have an impressive nutrient profile that deserves more attention. It is a good source of vitamins and minerals such as Vitamin K, Vitamin C, Folate, Manganese, Vitamin B6, Calcium, Potassium, and Magnesium, as well as being high in fiber.

Other little-known cabbage facts – it may help reduce chronic inflammation, lower the risk of certain diseases, lower blood pressure, increase heart function, improve digestive health, and help your body detox.

This coleslaw will tease your tastebuds and get you coming back for more. Since it's packed with antioxidants, vitamins, and liver-cleansing nutrients, your body will thank you for it!

Fresh Coleslaw Detox Recipe

Coleslaw

1 bunch mustard greens

½ head Savoy cabbage

½ head purple cabbage

4 large carrots

1 yellow onion

Chopped, toasted almonds

(optional)

Sunflower seeds (optional)

Gently steam entire whole leaves of the mustard greens until just soft; drain and refrigerate. Julienne the carrots and place in a large salad bowl. Thinly slice the Savoy and purple cabbages, mince the onion; combine with carrots and chill. At serving time, stir desired amount of the Onion Garlic Dressing into the chilled cabbage blend. Cut the whole steamed mustard green leaves into 5-10 pieces and arrange on individual salad plates. Cover with a serving of the fresh Coleslaw Recipe and top with toasted almonds and sunflower seeds.

Optional: add grated Fuji apple, walnuts, raisins, or cranberries for a sweet edge.

Dressing

2 tablespoons apple cider vinegar

1/8 teaspoon cayenne pepper

1/3 cup Greek yogurt (cow, goat, or sheep)

2 teaspoons agave nectar or honey

1 teaspoon fennel seeds

1/2 teaspoon sea salt

In a small bowl, whisk together all the ingredients for the dressing. Top the salad with the dressing and mix until evenly dressed.
